做法:
1. 加入100克麵粉,20克木薯粉,半茶匙泡打粉,半茶匙鹽到盆中。Add in 100g plain flour, 20g tapioca flour, half teaspoon of baking powder, and half teaspoon of salt into a bowl.
2. 加入1/4茶匙白胡椒粉,一茶匙白砂糖,一顆蛋,130毫升水。Add in 1/4 teaspoon white pepper, one teaspoon granulated sugar, one egg, and 130ml of water.
3. 攪拌均勻至麵糊滑順。Stir well until smooth and no lumps.
4. 加入30克紅蘿蔔,20克青蔥,攪拌均勻。Add in 30g of carrot and 20g of spring onion and mix well.
5. 加入120克小蝦,混勻。Add in 120g of shrimp and mix well with the batter.
6. 開火加熱(連同模具一起),用木筷子測試1熱度,筷子邊冒出泡泡後把火轉至中小火就可以開始炸了。拿出一個模具平均加入麵糊。Heat up the oil (together with the mould) until the bubbles came out from the chopstick and turn it to medium-low heat. Take out one of the mould and add in the batter evenly.
7. 浸入熱油中等(20-30秒左右)蝦餅脫模具,換另一個模具繼續下一片,兩個模具相互切換這樣可確保每次加入麵糊前模具是熱的。重複做完所有麵糊(約18片)。Deep into hot oil and wait (20-30sec) until it detached from the mould itself and change anther mould for next piece of shrimp cake, keep changing between two moulds could make sure mould is heated up everytime before adding the batters. Repeat the steps until the batter is finished (around 18pcs).
8. 炸至金黃色。Fry until golden brown.
9. 完成。Done.
Tips:
1. 模具一定要夠熱才能加入麵糊,不然會黏在模具上無法脫模。Shrimp cake will stick to the mould if the mould is not heated up so make sure you don't skip this step everytime before you pour in the batter.
