馬蹄酥 / 香餅 / 甜燒餅 Chinese Sweet Puff Pastry

材料:

            水皮:
            低筋麵粉 120克
            白砂糖 半湯匙
            豬油 40克
            冷水 50克

            油皮:
            低筋麵粉 80克
            豬油 30克

            餡料:
            低筋麵粉 45克
            糖粉 50克
            麥芽糖 30克
            豬油30克

            裝飾:
            糖漿
            白芝麻
        
            Water dough:
            Cake flour 120g
            Granulated sugar 1/2tbsp
            Cold water 50ml
            Pork lard 40g

            Oil dough:
            Cake flour 80g
            Pork lard 30g

            Filling:
            Cake flour 45g
            Icing sugar 50g
            Maltose 30g
            Pork lard 30g

            Topping:
            Syrup
            White sesame

做法:

1. 加入120克低筋麵粉,半湯匙白砂糖,50毫升冷水,40克豬油到一個大盆中。Add in 120g of cake flour, 1/2tbsp of granulated sugar, 50ml of cold water, and 40g of pork lard into a big bowl.

2. 攪拌均勻揉成麵團。用保鮮膜包裹緊密放入1冰箱冷藏20分鐘。Mix well and knead into a dough. Cover tightly with plastic wrap and refrigerator for 20 minutes.


3. 加入80克低筋麵粉,30克豬油到一個大盆中。攪拌均勻揉成麵團,用保鮮膜1包裹緊密放入冰箱冷藏20分鐘。Add in 80g of cake flour, and 30g of pork lard into a big bowl. Mix well and knead into a dough, cover tightly with plastic wrap and refrigerate for 20 minutes.


4. 加入45克低筋麵粉,50克糖粉,30克麥芽糖,30克豬油到一個大盆中。Add in 45g of cake flour, 50g of icing sugar, 30g of maltose, and 30g of pork lard into a big bowl.


5. 攪拌均勻揉成麵團,用保鮮膜包裹緊密。Mix into a dough and cover tightly with plastic wrap.


6. 水皮油皮各分10份,水皮一個約20克,油皮一個約10克。Divide water dough and oil dough both into 10pcs, around 20g of each piece of water dough and 10g for each piece of oil dough.


7. 將油皮包入水皮裡。Wrap oil dough inside of water dough.


8. 餡料分10份,一個約12-15克。Divide filling into 10pcs, 12-15g each.


9. 參考視頻裡的做法重複捲起兩次。靜置麵糰20分鐘。Roll up twice as shown in the vide. Rest the dough for 20 minutes.


10. 拿出一個麵團參考視頻做法桿成扁圓形。Take out one of the dough and roll into a flat round shape as shown in the video.


11. 將餡料包入酥皮裡。Wrap filling inside of the pastry dough.


12. 刷上糖漿,撒上白芝麻。Apply a thin layer of syrup and sprinkle some white sesame on top.


13. 放入烤箱180度烤約20-25分鐘。Bake for 20-25 minutes at 180 degrees celsius.


14. 完成。Done.
