做法:

3. 篩入300克普通麵粉,半茶匙泡打粉,半茶匙蘇打粉和一茶匙鹽到盆裡。Sift in 300g of plain flour, 1/2tsp of baking powder, 1/2tsp of baking soda, and 1tsp of salt into a bowl.
4. 加入120克白砂糖,140毫升水,1/4茶匙碱水,麵種並攪拌均勻。Add in 120g of granulated sugar, 140ml of water, 1/4tsp of alkaline water, dough starter and mix it well.
5. 加入一湯匙油,混合均勻。Add in 1tbsp of oil and mix it well.
7. 混合三湯匙白砂糖,兩湯匙普通麵粉,三湯匙熱水,攪拌均勻。Mix 3tbsp of granulated sugar, 2tbsp of plain flour, 3tbsp of hot water and stir to form a thick, smooth batter.
8. 把麵團桿成1-1.5釐米厚度。Roll out the dough into 1-1.5cm thick.
9. 切成長條,塗上甜麵糊。Cut into strips and brush with sweet batter on top.
10. 甜麵糊那面沾上白芝麻,輕壓兩端在一起,放在已塗好油的盤裡。Coat with white sesame seeds on sweet batter side, press slightly to bring two ends together and place in a greased tray.
11. 加熱油至木筷子邊冒出泡泡後轉至中火。炸馬腳至金黃色。Heat up the oil and turn to medium heat when bubbles came out from the chopstick. Fry Ma Qiok until golden brown.
12. 完成。Done.
Tips:
1. 麵團在操作時會比較黏手是正常現象,可灑多些麵粉讓麵團比較好操作成型。It is normal if you find the dough is sticky and hard to work on it, sprinkle more flour to help you shape the dough.
