金瓜薏米糖水 Pumpkin Barley Soup

材料:

            南瓜 220克
            薏米 100克
            水 2公升
            冰糖/白砂糖 120克
        
            Pumpkin 220g
            Barley 100g
            Water 2L
            Rock sugar/Granulated sugar 120g

做法:



1. 準備220克南瓜(切塊)。Prepare 220g of pumpkin (cut into cubes).




2. 鍋裡加入南瓜,100克薏米,2公升水。Place pumpkin, 100g of barley, and 2L of water into a cooking pot.




3. 開蓋子大火煮至沸騰,再轉小火蓋上蓋子繼續煮約20分鐘左右。Bring to boil on high heat with lid open, then turn to low heat and continue to cook for 30mins with lid open.




4. 用湯匙和篩子輕壓將南瓜搗爛。Gently mash the pumpkin with a spoon and sieve.




5. 加入120克冰糖/白砂糖,蓋上蓋子繼續煮一小時。Add in 120g of rock sugar/granulated sugar and continue to cook for another one hour (lid closed).




6. 完成。Done.
